Vanilla Wafers with Sorbet and Raspberries


1 (8 ounce) box vanilla wafers
2 pints lemon or chocolate sorbet
2 cups fresh or frozen and thawed raspberries
Mint leaves


Crush vanilla wafers into crumbs in a food processor, then divide crumbs between 8 ice cream serving bowls or dishes. Scoop 1/2 cup of sorbet into each bowl, then top with raspberries and mint and serve immediately.
